want to achieve.
The portafilter diameter is not just a technical specification: it directly affects the result in the cup. Changing the diameter changes the height of the coffee puck and
therefore the way water flows through it during extraction.

54 mm diameter

CHARACTERISTICS

• Taller coffee puck
• More stable and tolerant extraction
• Fuller-bodied and creamier espresso

WHEN TO RECOMMEND IT

  • With coffees that do not require high doses
    The smaller diameter allows a taller puck even with moderate doses.
  • When a fuller-bodied, creamier espresso is desired
    The thicker coffee layer tends to promote greater structure and density in the cup.
  • To reduce the risk of channeling
    The greater height and compactness of the puck can help create a more
    stable flow distribution.
  • When greater extraction tolerance is needed
    It can be more forgiving with small inaccuracies in grinding or distribution.

58 mm diameter

CHARACTERISTICS

• Lower coffee puck
• More defined extraction
• Cleaner, more aromatic cup

WHEN TO RECOMMEND IT

  • To highlight light, fruity, or acidic specialty coffees
    The lower puck promotes cleaner and more defined extractions.
  • When a “cleaner” and less full-bodied profile is desired
    The larger surface area tends to produce clearer cups with more pronounced flavor separation.
  • With high-dose recipes (18–21 g or more)
    The wider surface manages higher doses better without excessively increasing puck thickness.
  • When following a “third wave” extraction style
    The 58 mm diameter is the standard for professional machines and competitions.
