La San Marco successfully concluded its participation in the TriestEspresso Expo 2024, one of the most prestigious international trade fairs in the coffee industry. The event, held in Trieste, served as a meeting point for professionals and enthusiasts, offering a unique opportunity to explore the latest innovations and trends in the sector.
La San Marco played a leading role, capturing attention with its advanced coffee machines and exclusive demonstrations. Among the most appreciated events was the interactive Latte Art workshop held on Friday, October 25, at our stand, featuring the extraordinary participation of Salvatore Riunno, multiple champion in the Latte Art Grading System.

Salvatore Riunno, originally from Naples and a prominent figure in the latte art community, captivated the audience with his extraordinary technique. Winner of two world titles in the green and red categories and recent Italian champion with the prestigious black title in 2024, Salvatore brought his expertise and talent to La San Marco’s stand, making the event a memorable experience for all participants.
During the workshop, Salvatore demonstrated the use of La San Marco’s patented FTL (Fine Tuning Lever) system, illustrating how this innovative technology allows ergonomic and precise steam flow control, reducing milk preparation time and enabling the creation of a dense, velvety foam, ideal for artistic cappuccinos.
Interview with Salvatore Riunno
Salvatore, during your performance at La San Marco’s stand, you impressed everyone with your breathtaking artistic cappuccinos. What can you tell us about the FTL system you used during your performance?
S.R.: I was already familiar with La San Marco’s FTL device, which stands for Fine Tuning Lever. It’s a patented system that allows for an ergonomic and extremely precise use of the steam control lever. Ergonomic because a small rotation of the lever is enough to open the steam flow, precise because the steam flow responds very sensitively to even the slightest angle of lever rotation. This results in a reduction in the time needed to froth milk and the ability to produce a dense foam, ideal for creating artistic cappuccinos and other milk-based beverages.
What was your personal experience presenting a workshop like this at TriestEspresso Expo 2024? What impressed you most about the audience?
S.R.: It was an incredibly stimulating experience. The audience’s enthusiasm and attentiveness gave me extraordinary energy. I noticed a strong interest in technical details and the chance to experiment directly. It was great to see so many professionals and enthusiasts actively participate and ask in-depth questions.
In your opinion, how important is the interaction between technology and human skill for achieving excellent results in latte art?
S.R.: It’s essential. Technology, like that offered by La San Marco with the FTL system, makes the barista’s work smoother and more precise, allowing for greater focus on art and creativity. However, human skill remains central: it’s the experience and sensitivity of the barista that transform a good cappuccino into a true work of art. The right balance between advanced tools and skilled hands is the key to excellent results.
Looking to the future, what challenges do you think latte art will face, and what opportunities do you see?
S.R.: Latte art is becoming increasingly popular worldwide, and with it grows the demand for skilled and creative baristas. The main challenge will be to continue innovating and maintaining a high level of quality, even in a context where speed is essential. There are many opportunities: training and spreading advanced techniques, as well as collaborating with companies like La San Marco that invest in technology and innovation, will open new paths for professional growth.
